Recipe Saturday: Low Carb Stuffed Bell Peppers

Healthy and delicious low carb stuffed bell peppers


  • 4 bell peppers
  • 1 pound ground turkey
  • 2 tablespoons of olive oil
  • 1/2 white onion, chopped
  • 1 cup sliced mushrooms
  • 1 zucchini, chopped
  • 1 cup fresh spinach
  • 1 can diced tomatoes (400 ml)
  • 1/4 cup shredded cheddar cheese
  • Worcester sauce
  • Italian seasoning, black pepper, onion powder, garlic powder, dried pepper flakes, and basil to taste


  • Preheat oven to 350 degrees
  • Wrap the bell peppers in aluminum foil & place in baking dish
  • Bake 20-25 minutes, remove from heat
  • Brown the ground turkey then set aside
  • In a skillet, use the olive oil to saute the onions, mushrooms, zucchini, and spinach
  • Add turkey to the skillet and mix with the sauteed vegetables
  • Mix in the tomatoes, seasonings, and Worcester sauce
  • Stuff peppers and return to oven for 10 minutes
